Christmas Cookie Fun

My whole family has been sick this weekend. Isla had a tummy bug and I’ve got a terrible upper respiratory infection at the moment. I thought Evan had been spared but he has caught Isla’s tummy bug. That is why I haven’t posted in a few days. Saturday afternoon we made some cookies and I wanted to share the recipe with you.

I have always loved baking with my Grandma. It doesn’t happen very often because she lives in Illinois and we only see her every couple of years. We always exchange recipes and try them out. My grandma makes all kinds of cookies for Christmas. When we visit her house she has tubs and tubs full of every kind of cookie you could want. It’s amazing.

I’ve always liked her sugar cookies the best. I made them this weekend with Isla and then my nephews came over to decorate them. We had so much fun using different icing and sprinkles. Isla wasn’t that into it this year but I think she will enjoy it later on.

Here is the recipe that I used:

Christmas cookieStart by pre-heating your oven to 350 degrees

Ingredient list:

  • 1 cup margarine
  • 1 cup white sugar
  • 1 cup confectioner sugar
  • 2 eggs
  • 1 cup vegetable oil-or you can sub olive oil
  • 1 teaspoon salt
  • 5 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla
  • 1 teaspoon lemon extract

I mixed all my dry ingredients first in my kitchen aid stand mixer and then added my wet ingredients.

Once everything was mixed up I used flour to roll the cookies out with a rolling pin. I ran out of flour about halfway through but I looked it up online and it said that powdered sugar could also be used. It worked really well.

Once the cookies were all rolled out I used our cookie cutters and cooked them at 350 degrees Fahrenheit for 12 minutes. I like my cookies a bit crunchy but if you wanted a softer cookie you could bake for only 10 minutes instead.

I made homemade icing using powdered sugar, milk, vanilla extract and margarine. There are tons of icing recipes online if you don’t have those items. We are not professional cookie decorators but it was so much fun to try.

I also bought green glitter icing and red icing from target for piping. I got the sprinkle mix from Aldi. I liked that it came with 6 kinds of sprinkles. The kiddos enjoyed it a lot. I spread out some parchment paper and let them go for it. It was so messy but they had a blast.
